Lemon Caesar Dressing
A citrus-infused version of the famous Caesar salad dressing! Best of all, it can be done in minutes using a high-powered blender! Pair it with some fresh romaine lettuce and shredded chicken breast for a wonderful and healthy meal.
- ¼ cup unrefined extra virgin avocado oil
- 3 tablespoons lemon juice freshly squeezed
- 1 tablespoon low-fat yogurt
- 1 teaspoon Worcestershire sauce
- 1 teaspoon finely grated lemon peel
- 1 teaspoon organic spicy brown mustard
- 2 cloves garlic
- Salt and black pepper to taste
Combine all the ingredients in a high-powered blender or food processor and blend until smooth. Season with salt and pepper to taste.
Transfer to a mason jar or container with a tight-fitting lid, cover, and refrigerate until chilled.
Serve over salad and enjoy!
- To make this recipe gluten-free and soy-free, replace Worcestershire sauce with an equal amount of balsamic vinegar or coconut liquid aminos.
