Classic Fathead Pizza Crust

Gluten-free pizza. You can make it with almond flour (this is our preference) or coconut flour. The steps are the same. Add toppings to taste.

Ingredients

Fathead pizza dough recipe with almond flour:

  • 3/4 cup almond flour
  • 1 1/2 cup mozzarella
  • 2 tbsp cream cheese
  • 1 egg

Fathead pizza dough recipe with coconut flour:

  • 1/3 cup coconut flour
  • 1 1/2 cup mozzarella
  • 2 tbsp cream cheese
  • 2 eggs

Instructions

  • Melt the cheeses together in a microwave or a double boiler on the stove.
  • Form the dough with the flour and egg. Keep the dough uniform. You can use a food processor, which I find easiest, or knead it with your hands and squeeze through your fingers until it’s uniform.
  • Bake the fathead pizza. Once you have the dough, roll it out or form it into a crust, and bake. If its too sticky, try some of our tips for how to deal with this.

Notes

Sticky Fathead Dough - If the dough is too sticky, these might help:
  1. Chilling the dough: try 20 to 30 minutes.
  2. Use oiled hands: helps avoid sticking to your fingers.
  3. If the cheese solidifies too quickly: reheat a little to soften it, then try again.
 
Cooking Tools for Fathead Dough
  • Food processor – kneading by hand sounds old-world romantic, but a food processor is way easier!
  • Double boiler – If you don’t want to use the microwave, then I would use your instant pot as a double boiler. I have not tried this, but it looks really simple (here is a video).
