This kind of Japanese knife typically features “dimples” along the blade to stop food from sticking as you cut, speeding things up. However, Kyocera dismisses this feature here. There are some beveled markings, though, which might serve the same function.
It’s a wonderful blade for cutting straight pieces of vegetables and fruits or boneless fish or meats.
